When I'm gifted ground Venison every time my younger brother comes up from Virginia for a visit, it tends to add up in freezer space. I decided to brown up 8 lbs. of the Venison and 4 lbs. of grass-fed Beef and mix them together for canning.
I remembered that my grandmother always ground up some of the deer meat and processed it for the winter months. I decided to do the same with what I had on hand.
I drained the fat from the meat before putting it into pint jars, then I filled them with to 1" headspace with beef broth. Each jar got a teaspoon of Kosher salt too.
Once all the jars were filled, they got processed in the pressure canner for 90 minutes.
It worked out well using the pint jars which held a pound of ground meat each. Now, I will have it ready to use for tacos, chili, and probably goulash type meals.
It is being predicted that we will be having an extra harsh winter here in the Northeast. I will be processing different types of meals in a jar as well. At least I won't have to worry too much during any power outages. Having a stocked pantry gives me comfort knowing I have plenty of food for my family on hand.

You're welcome, I am doing everything I can to have a stocked pantry for my family. It does save time when you make large batches at once and the cleanup is easier too.
It's been so long since I've had venison! You are lucky your brother shares with you! Good you can find grass fed beef.Do you know if it is also grass finished?
I'm not sure if the beef is grass finished or not. Either way it is the only beef that does not make me feel sick to my stomach after eating it. Regular ground beef from the grocery isle always does. I'm making different meals in a jar too, just don't have the energy to make posts about them all. lol

I gotta get a canner for this type of stuff! We have a gigantic pot and just boil them for an hour.. but a canner would work much better lol. I've been trying to save the produce from the farms, and the last 2 years I've made a bunch of jams and preserves, but pulling out the big pot to boil them has been a bit of a thorn of mine..
I never thought to try it on ground meat though, great idea!
I get it! The canner is large and heavy too, but I add most of the water with a smaller pot, so I don't have to lift it with water in it. I take it out the same way, that saves my back big time. I just did Raspberry Jam this week, and oh my it is delicious. Happy Canning!
