Fresh and Nutritious Spring Soup

Today was an excellent day for trying out new recipes and cooking. I have tried some variants of the recipe we are going to try today, and any vegetable variety works pretty well. It all depends on your preferences and the ingredients you actually have.

Without further ado, let us make a tasty and nutritious vegetable soup that can be served as a main course.

Why is This Spring Soup so Special?

Spring is a remarkable season in my country since our winters are usually longer and colder. Spring awakens the senses and fills the air with sunshine, while also providing new products to cleanse our bodies from the heavier winter foods.

This is why I like this kind of soup so much. There are several fresh ingredients to choose from; you can mix and match them to your liking or try something different each time. The soup retains all of its nutrients and fibers while remaining smooth and delicious.

What You Need for the Spring Soup?

You can use any vegetable you want and have on hand for this recipe. However, I choose ones that I know have a fine taste as well as extra health benefits. Here's what I used:

  • 2 large yellow onions;
  • 1 zucchini;
  • 1 large sweet potato;
  • 1 cup peas,
  • 1 carrot
  • Olive oil and butter
  • Heavy cream

How to Prepare the Spring Soup?

The preparation of this delectable dish may take some time, but it is simple and the results are spectacular. The first thing I usually do is wash and prepare all of the produce I am going to use because I have a habit of forgetting things if I do not see them. I started by sautéing the onion in a spoon of butter and a splash of olive oil after chopping all the vegetables. The veggies don't have to be chopped finely because we are going to blend them all together later.

Do not mind my old mixing spoon; it is what my mother taught me to use. After the onion became translucent, I added all of the other vegetables I had on hand and sautéed them all for another 10 minutes. You might add some water if necessary, but my zucchini took care of that for me.

After the first 10 minutes, I will add some water and let it simmer for 30 to 40 minutes on low heat. I stirred it every now and then and added some water as it evaporated. The key is not to add too much water so it should be thick when cooking to be extra creamy in the end.

When all of the vegetables are cooked through, I remove them from the heat and whisk everything together with my trusty handheld mixer. This is the most time-consuming step because it will splatter all over the place and is very hot. Take your time and properly combine all of the vegetables.

Once you have blended all together, get another pot and a strainer ready. This step is optional so you can keep it as-is. On the other hand, I like it to be extra smooth, so I can go the extra mile and strain it all. As a result, I have a creamy, thick, and tasty soup.

I return the pot to low heat and add some seasoning as well as heavy cream. This is all up to you and your preferences. I season it with salt, pepper, and garlic powder. It can be made spicy, but I have a toddler and I like it when he enjoys this tasty soup, so I avoided all the heavy spices.

It may be accompanied by homemade bread, crispy bacon, or croutons. I normally put some seasoned bread balls and a splash of heavy cream on top. It looks incredible and tastes even better.
