Easy Cooking: Sweet and Sour Chicken

Hello, Sweet Cheeks!

I had a great weekend but woke up sick this morning. I was super sweating working in the backyard until 8 PM, and felt the breeze were getting too cold. For sure I didn't stop coughing throughout the night, and yep. This momma is sick now. Blah. I hope I will feel better asap as I will be starting at a new workplace in 2 days! Not gonna give a good start day impression if I arrive sicky 😅😬😬😅

I should have known that I would have come down with something as I didn't stop sneezing last Friday. In fact, on Thursday I should have stayed at home as I already caught the cold that day, tummy was super hurting. Meh.

Anyhoo.

Here is an easy cooking for today, Sweet and Sour Chicken.

2 chicken breasts, skinless, boneless
1 onion
10 baby carrots
1 can sweet corn kernels
2 green onions
1 tsp lime juice, adjusting while cooking
Chicken bouillon powder to taste
4 tbsp ketchup, adjusting while cooking
1/4 tsp ground white pepper
1 tbsp oyster sauce, adjusting while cooking
Sugar to taste

Slice thin onion, slice thin carrots, set aside
Slice chicken breasts into strips
Marinate chicken strips in ketchup, white pepper powder, oyster, and lime juice

Stir fry chicken until whitish
Add in corn and green onion

Adjust flavoring
Serve immediately with warm rice
