Nasi Kebuli (Indonesian Beef and Rice Pilaf)

It's so windy today. Snow drifting everywhere and we are back to -30ish C again.

Been living in the north for the past 11 years, there is this teasing week always, every end of January, where we would get warmer temperature for a couple of days or up to a week, in the middle of Winter, where temperature would get up to +7 C, feel like Spring, everyone hopes are up, and then boom, back to -30 C. Then Winter continues for several more months 🤣

It's like Winter saying, "got you real good, didn't I" 🤣🤪🤣🤪🤣

Anyhoo!

Back to the pilaf!

Beef and Broth:

700 g beef cubes
1 thumb size ginger
1 1/2 tsp minced garlic, store bought
1 tsp ground clove
1/2 tsp ground cumin
1 tsp nutmeg powder
1 1/2 tsp ground coriander
1/2 tsp cinnamon powder
1/4 tsp white pepper powder
6 green cardamom
2 Kapol (optional) - in Indonesia we have 3 kinds of cardamom, green, black and white. Kapol is the white cardamom.
1.5 l water

Rice:

500 g rice
Salt to taste
2-3 tbsp grapeseed oil
500 ml of beef broth (watch the vid)
2 lemongrass
Raisins, 2-3 handful or as you like

Beef:

Boiled beef (watch the vid)
Salt to taste
2-3 tbsp unsalted butter

Serving:

Acar timun (Indonesian fresh cucumber pickle) or Raita (Indian style cucumber salad), homemade or store bought
Fried shallots/onions
