Sandefjord is a large town in the Vestfold og Telemark part of Norway. It's from this town that this dish takes its name, nothing fancy - just says, "Sandefjord's butter."
Anyway, it looked like a good bet for a bag of salmon fillets I had in the freezer.
This (served with snow crab, Lactofermented Sauerkraut, and Tartar Sauce) is my entry for this week's @foodfightfriday challenge.

I will show you how to preserve lemons another time... but that's what I used for this recipe.
In a small pot, I melted:
- about 1/2 a stick of butter (about 4-5 tablespoons)
- 1/2 a preserved lemon sliced (you may use the juice of one lemon instead.)
When it's melted and heated through, stir in:
- 1/2 cup of cream
Pour the sauce over a pan of raw fish fillets. (I used salmon.)
Bake the fish at about 350F for 15-30 minutes or until the fish flakes with a fork.
Serve as part of a fish platter or a surf-and-turf meal.
