I like to eat. But I don’t like to slave away in the kitchen too long to prepare it.
One of the great advantages of winter is baking — warms the house and soul. Everything is improved in the oven.
In this case, I had a couple of baby zucchini’s, a Japanese sweet potato, a couple of peppers and garlic cloves — all of which I rough cut, slathered with olive oil & spiced (chili, lemon, salty& pepper).
Next, pop into a preheated oven (at 400 degrees) and forget about it for a full hour.
Meanwhile, sirloin steak is marinating, again olive oil, citrus, pepper, salt.
When there are 15 minutes remaining for baked goods in the oven, I heat a pan on high & pan sear the meat, 2-3 minutes on each side. Then, I bring heat down to medium low & watch it till it gets color.
And there you have it: a healthy, homemade feast—no fuss, no muss 👨🏻🍳
