Baked Vegetable Meatballs

Hello everyone, Today I will give you a recipe for meatballs with vegetables in the oven. I love baked goods. I also cook many dishes in the oven. I don't fry whenever possible because it is unhealthy.

• 1-2 tomatoes

• 1 eggplant

• 1 onion

• 1-2 green peppers

• 1 clove of garlic

Ingredients for the meatballs

• 250-300 grams of minced meat

• 1 onion

• 1 egg

• 2 fingers missing breadcrumbs from 1 tea glass

• 3-4 sprigs of parsley

• Salt and spices

First of all, let's get a big bowl to knead the meatballs. Grate the onion into the bowl. Then add the minced meat, egg, breadcrumbs. Lastly, add the parsley, salt and spices. Let's knead them all.

I generally make small meatballs for both grilled meatballs and meals from 1-2 kilos of ground beef and put them in the freezer. Then I don't bother to knead meatballs again. In this, I actually used my meatballs in the freezer. I am sharing the recipe here to show you how to make the meatballs that I will use in the meal. Let's make round meatballs in the size of an average egg yolk from the meatball dough we kneaded. I forgot to take a photo of the meatballs I made here. After preparing our meatballs, set them aside. To bake our vegetables, let's first put the baking paper on the baking tray. Then, let's cut the potato, carrot, green pepper, capia pepper, eggplant and zucchini to the size we want. Since we will add tomatoes and onions last, we do not cook them with other vegetables. I don't like chopping vegetables too big. I cut it to the size you see in the picture.

Let's oil these chopped vegetables and cook them in a preheated 200-degree oven for 15-20 minutes after they are seasoned.

Then I prepare the sauce with tomato paste. I take the vegetables and meatballs that I cooked into another oven dish.

I add the tomato and onion that I cut into cubes on it. Let's pour the tomato paste sauce on it.

Bake in the oven at 180 degrees for about 10 minutes
