I would assume that those are still residues from their previous eating habits since this was just a test for a week and I bet that many of those substances need a little longer to get rid of ;)
But the one-week experiment shows us clearly that we can get so much healthier in a very short time! I am sure you will like the article by Collective Evolution that I linked in here.
