Small beans cakes served with garlic sauce

Vegan food is the ideal way of feeding ourselves, the only thing is that we have to know the nutritive value of food to satisfy the daily requirements we need to be healthy. As animal proteins are not present in the menu, it is important that you eat food which complement the body requirement of proteins.

I always make sure to eat beans, seeds, dried fruits, tofu, and vegetables and fruits such as avocados, eggplants, bananas, and cereals like quinoa. To be vegan means to be creative because it is not easy to cook a meal with the vitamins and minerals to promote a healthy growth of children.

Beans are a good option for proteins and there are many varieties, and many ways of cooking them. Today I am using some small beans and with an exquisite taste. Here in Venezuela we call them Frijoles Bayos. They need to be soaked some hours before using them.

Ingredients:

  • 1/2 kilo of beans, any you prefer
  • 1 small onion
  • 2 garlic cloves
  • 1 tablespoon of cumin seeds
  • 1 teaspoon of cinammon
  • 2 chillies
  • 1 teaspoon of unflavored gelatin
  • 1/4 cup of corn flour
  • olive oil
  • salt

Preparation:

  • soak the beans for 6 hours
  • wash them and cook until they soften
  • strain the water to use only the grains
  • add the onion, chillies, garlic, gelatin and spices
  • process the beans in the blender
  • adjust the salt
  • once processed add the flour and mix well
  • make the cakes with your hands and fry them
  • cook them on both sides until golden
  • serve with garlic sauce or any you prefer

My family and I just made something very similar a few days ago, but using chickpeas instead. It was a hit with our family, so we will surely be making these again. I love the garlic sauce too, nice addition.
