Hello @ecotrain and Hive community. I'm back already!! For the past 2 weeks, my computer has been crashing so I have had to stop my blogging passion, which has made me regret. Blogging by phone is something very difficult for me. My computer finally recovered but there are still some computer errors that they can't fix, it's okay I'm still trying to write my article today. After my computer came back up, I went to @ecotrain and saw if there were any new cooking contests. It's great that there's a noodle or pasta contest going on!!! So I decided to go to the kitchen and cook up a Vietnamese "beef pho (noodle) soup".
Thank you for organizing this amazing contest, I bet there are a lot of delicious noodle recipes being created.
About Beef Pho Soup
For a very long time, Pho has been a special dish of Hanoians. You can eat pho at any time of the day, restaurants or small eateries often sell pho from early morning to late night. Pho like rice noodles is made of rice flour but coated in thin sheets and then cut into fibers. The most important part in pho is broth. Beef broth is made the tradition old way, slowly beef bone simmered with onion and ginger and other ingredients such as cinnamon, anise, .. created a delicious broth mixture. The broth is poured over pho and served immediately with lettuce, green onion leaves or banana flowers.
Steps to make beef noodle soup:
This is my version of beef pho, I've added a variety of veggies that I love. In the traditional way, you have to simmer beef bones for about 4-6 hours with spices such as onions, cinnamon, anise, ginger. But I have found a way to cook beef pho that can save you time, only 30 minutes we have a delicious bowl of beef noodle soup. I bought a beef broth seasoning pack at the supermarket, with 1 pack weighing 57g you can cook 6 bowls of beef noodle soup. This seasoning package includes: salt, broth mix, ginger, cinnamon, anise, syzygium aromaticum, black cardamom, palm oil, beef flavor, ..With just such a seasoning pack I had a sweet and delicious bowl of beef pho that tasted just like the restaurant.
Ingredient:
- Dry Pho (rice noodles)
- Beef
- Onion
- Carrot
- Bean sprouts
- Mushrooms
- Broccoli
- Greeen onion
- Lettuce
- Broth seasoning pack (If you don't have this seasoning pack but you want to cook pho with the right flavor, you need beef bones, anise, cinnamon, , syzygium aromaticum, black cardamom)
- Ginger
Step 1:
Wash lettuce and bean sprouts, onions, green onions, carrots, broccoli. To ensure food safety, I recommend you wash them several times with water then soak them in salt water for about 15 minutes and then drain. Salt water kills bacteria in vegetables, so this is a necessary step. Cut cauliflower into small pieces, cut carrots into flower shaped cubes according to your preference. Cut scallions into small pieces about 0.2 mm. For stir-fries I usually cut the scallions into 1-1.5cm pieces, but for soups I recommend cutting them into the smallest pieces possible. Boil shiitake mushrooms until they expand and soften, remove and rinse several times with water.
Step 2:
In a pot, add water and broth seasoning packet, add ginger and simmer until boiling. Drop the shiitake, cauliflower, carrot and onion into the pot. Blanch the bean sprouts for 30 seconds, then blanch the pho for about 1 minute until the pho is tender, finally blanch the beef for about 30 seconds - 50 seconds until the beef turns brown. You should use a ladle with holes to do this, make sure that you blanch in strong boiling water.
Step 3:
Take turn to scoop pho into bowls, arrange shiitake mushrooms, broccoli, carrots, beef, bean sprouts on top. Then add the chopped scallions, finally you need to pour the broth on top. This dish will be perfect if you serve it with lettuce, chili and lemon juice.
