Eggs for breakfast

Garden ingredients

Lets make some eggs for breakfast. All these ingredients are from my garden - cayenne pepper, garlic, onion, and tomatoes.

Eggs

Eggs from the Maple Meadows Farm close by down the road in Salisbury, Vermont.

Butter

And of course since I'm in Vermont with all the dairy farms I use butter.

Cast Iron pan

My old cast iron pan is ready to go.

Sliced bread

I'm going to make a sandwich so some thick sliced bread for toast.

Toaster Oven

I start by putting the bread in my ancient toaster oven.

Sautee

Then I saute the onions and garlic.

Pepper

While the onions and garlic are cooking down, I slice up the pepper. Raw cayenne pepper is very hot which I love 😋

Tomato

And slice the tomato.

Crack eggs

Next crack the eggs into a bowl.

Beat eggs

I beat up the eggs today because its prettier but some times I just do the eggs over easy.

Add eggs

Technically you should take the sauteed onions and garlic out of the pan and add them back in later but you can get away with just adding the eggs in if you are careful.

Eggs

Then spread the onions and garlic out over the eggs before the eggs set up.

Folded

Next fold the eggs over.

Flipped

Then flip them over to cook the other side. Lovely like this but we are going to make a sandwich.

Toast

The toast is done so lets plate up the sandwich.

Sliced

I split the eggs into three sections.

Peppers

Add the peppers.

Finished sandwich

Now the tomatos. And you are done. The cool tomatoes are great with the hot eggs and spicy peppers. Enjoy!

Clean pan

Here is the pan after cooking. The great thing about a well seasoned cast iron pan (and lots of butter 😉) is the eggs don't stick at all.

Wipe down

Just wipe out the pan. Thats all the clean up necessary.

Maple Meadows is great! Although the area I live in now has plenty of great local farms, I do definitely miss the small farming community I grew up with in Vermont. Cheers!

Geez, you are like my helper friend who adores all things hot. I couldn't imagine hot peppers for breakfast! The rest sounded really good though!
