But then, rummaging through the fridge, I found the rich Southern Thai curry paste I'd prepared, along with some large limes I'd picked from the garden. And that's it! An idea for a dinner menu suddenly came to mind. Plus, since our restaurant is currently a vegetarian holiday, we had some fresh shrimp left in the freezer. So, I thawed the shrimp and prepared them for this special dish.

  • Raw Papaya: Peel the raw papaya, remove the seeds, wash thoroughly, and cut into bite-sized pieces. Set aside.

  • Shrimp: Defrost the shrimp, peel, devein, and remove the vein. Wash thoroughly and set aside.

  • Red Curry Paste: If using ready-made red curry paste, dissolve it in a little water first.

  • Start making the curry paste:

  • Place a pot of water in a pot and bring to a boil.

  • Once the water boils, add the prepared red curry paste/yellow curry paste and stir until the curry paste is completely dissolved in the water and the curry paste comes to a boil again.

  • Add vegetables and season:

  • Add the prepared chopped green papaya, as it takes longer to cook than the shrimp. (If you prefer your papaya softer, add it earlier.)

  • Wait until the broth is boiling and the papaya begins to soften or soften, depending on your preference.

  • Season with fish sauce and palm sugar. Add gradually and taste. Adjust the seasoning to be sour, followed by spicy, salty, and slightly sweet.

  • Add the shrimp:

  • Once the flavors are right and the papaya begins to soften, add the fresh shrimp.

  • Tip: Avoid stirring frequently and boil the shrimp just until cooked through (they will turn a beautiful orange color). This prevents them from becoming tough and keeps the meat tender and sweet.
  • Once the shrimp are cooked, turn off the heat.
  • Squeeze in fresh lime juice from your garden.

This final step adds a refreshing aroma.

  • Serving:
  • Ladle the shrimp and papaya curry into a bowl and serve with hot steamed rice and an omelet or crispy fried fish. It's guaranteed to be a hit with everyone in the family.
