I have had many a sourdough on the go. I used to use rye flour but eventually had to go for white as my youngest son is hugely suspicious of non white bread 😃
Blame the parents... ;D
I started with rye, too. But I am suspicious of yes white bread ;)

I have some friends who are really into it. It seems to be a Finnish man thing to do at some stage in life. I am not Finnish enough - nor do I eat much bread! :D
Nor do I. But I seem to be in that stage of life where I want to be a caveman. Still haven't finished the clay-and-pottery high school.
