| En Gambie, les jeunes feuilles du Baobab sont consommées en légumes mais la plupart du temps, elles sont légèrement séchées à l’ombre puis réduites en poudre au mortier. Cette poudre appelée NAMOUNKO est riche en vitamines (A,C), en fer et en mucilage. Elle est cuisinée avec d’autres céréales ou seule avec des arômes et condiments pour accompagner en sauce les plats locaux. Encore un bel apprentissage et une belle expérience ! In The Gambia, the young Baobab leaves are eaten as vegetables but most of the time, they are lightly dried in the shade and then reduced to powder in a mortar. This powder called NAMOUNKO is rich in vitamins (A, C), iron and mucilage. It is cooked with other cereals or alone with flavorings and condiments to accompany local dishes in sauce.
