#GRATEFULVIBES - ATTITUDE OF GRATITUDE/WEEKLY THOUGHTS - 18 SEP 2023 - 24 SEP 2023

Good morning, Hive-ians! 😊
image.png
I made another pie this week, it didn’t stay completely around the whole edge, but it was pretty close, and my handsome husband enjoyed it, so it was a win. 😊
image.png
It’s been a good week for Roma tomatoes! 😊
image.png
I took some time to make my mother-in-law’s Coffee Cake recipe this week. 😊
image.png
Our handsome bull Prince Lee, enjoying his evening bucket of tree fall apples. 😊
image.png
I had to take a picture of this duck-shaped zucchini before I shredded it and its little friend behind it and put them in the freezer for a future zucchini loaf. 😊
image.png
Most of our Sunflowers have been harvested, but there are still a few out there to keep the pollinators happy. 😊
image.png
Some of them are big, like this one, but there are still a few little ones fighting to produce a few seeds before the frost comes. 😊
image.png
We’re really looking forward to expanding our Sunflower beds next year. 😊
image.png
Just over 11 pounds of tomatoes harvested here. 😊
image.png
This has been the year for the nightshades. This harvest was 8.5 pounds, but we have harvested that much and more a few times this week, plus blessed our neighbour with a bunch like this and a bunch already chopped up and frozen for him to use on those nights when he just needs a break. 😊
image.png
This is those same 8.5 pounds of Sweet Peppers, chopped up and frozen, for future use. 😊
image.png
Our onions/pepper drying and tomato colour changing station is getting full. 😊
image.png
My favourite tree standing so tall and pretty with the other trees changing colours around her and the fog receding behind her. 😊
image.png
I had to make another batch of brown sugar this week. 😊
image.png
The buns turned out really nice and fluffy this week, two kneading’s before forming and letting them rise on the pan, then cooking them really made a difference. 😊
image.png
My handsome husband harvested our first pumpkin a couple of days ago, she’s a beautiful bright orange. I can’t wait to make a pie out of her. 😊
image.png
This big, beautiful beast was the next one to come inside. Plus there are at least 36 more sitting outside waiting to come in, and still more in the garden to come out, so, I don’t think we’ll have trouble getting enough seeds to cook for us, our son and his family, our neighbour and his daughter, and probably still have plenty for the chickens, dogs and bull to enjoy as well. 😊
image.png
Oh, we got our very first green/blue egg from our hatchling hens this week, that was so cool, to us. 😊
image.png
We also experimented with making dog treats/cookies to replace the ones we usually buy. They were super easy to make too. Just a few ingredients and then after baking I basted them with some Hickory BBQ sauce and put them through the air fryer for a few more minutes. After they cooled, I let the dogs taste test them…and the dogs have voted…they are a hit. 😊
image.png
We harvested and processed 16 pounds of tomatoes today. Ten pounds went into the pot to cook down…its still in the pot actually, but this is just after we started cooking them down. 😊
image.png
Look who came by for a visit this afternoon, Smudge! She’s almost completely healed from her battle at the beginning of the summer, which was good to see. 😊
image.png
Well, that was how things have been going for us here. I hope you have all been safe and healthy and have had an amazing week! I’m grateful to God for blessing us with another week to share with you here. 😊 God bless you all. 😊 Have an awesome week everyone! 😊

Wow! Lots of good eats! Glad to see Smudge looks a lot better now! God bless!

Welcome back my friend, thanks for visiting! 😊

Awe, thank you very much, that made my day! Yes, we eat pretty good here, considering I cook it all on the barbecue as our stove died on Christmas 2019 and we haven't had the funds to replace it yet. Soon I'll be cooking on our wood stove, its getting almost cold enough to start one...another few weeks and we'll have the fire going steady, yikes, winter is coming fast. 😊

We were glad to see Smudge healed up, she'd been absent for the past two weeks and we worried something happened to her, but she just ran on up and climbed into my lap yesterday like she'd never gone anywhere. It was a treat for me, for sure. She's so soft and such a sweet girl, well, as long as the pigeons or another critter don't try to get her Sunflower seeds, she's sweet, but if they try, she can get quite dangerous sounding and the volume is quite impressive too. LOL! 😊

Thank you for the tip, it is much appreciated! 😊

God bless you and yours. Have an awesome day my fabulous friend! 😊

Sure a lot of tomato photos! That coffee cake looked wonderful! Busy times at your place!

Welcome back lovely lady, thanks for visiting! 😊

Yes, very busy here. (Yesterday, our neighbour invited me to go with him to Fredericton to the Costco and I accepted as I hadn't been off the property in ages and its been years since I'd been to Costco. My land, we walked every aisle; he wanted to see every thing. He'd not been to Costco before and was amazed by the selections and quantities of items available there. I was a bit overwhelmed myself, to be honest, as I hadn't been around that many people in so long, it took some adjusting to, for sure.) Loads and loads of tomatoes have come in off of the Roma's we planted this year. It's been a blessing and slightly stressful, so I started putting them in giant Ziploc bags in the freezer in the basement...thinking, out of sight, less stress, right? It's helped a lot. There are still tomatoes out there, but we're getting colder at night, so we might lose some to frost...well not lose, as the chickens and Prince Lee will all be happy to eat anything the frost hurts. We will definitely be planting Roma's again next year. They are our new favourite tomato, pretty little flowers and very prolific growers/fruit bearers. I think that we should have enough harvested to make a years worth of sauce for us, maybe, if I got the calculation of 10 pounds of tomatoes equaling roughly a quart of sauce, after it's all cooked down/thickened up, right. I'm not great at math, more of a speller, but I try hard. LOL! 😊

Today, I two batches of oatmeal chocolate chip cookies in our little Vortex Plus thingy, two batches of buns on the barbecue, cored and quartered another six pounds of tomatoes, chopped up approximately five pounds of yellow and purple onions; (still regretting not remembering to weigh them all, doh,) while testing my math by cooking down 10 pounds of tomatoes on my wonky burners of my broken oven. LOL! 😊

Thank you very much, my mother-in-law was kind enough to give me her coffee cake recipe years ago and I've been making it a few times a year ever since. It's always been a hit with our whole family. 😊

Well, it's been another busy day for us both and we deserve a good nights sleep, so I'm going to say goodnight and chat with you again soon. 😊

God bless you and your wonderful family. Have an awesome day my fabulous friend! #&128522;

I did 40# of tomatoes (with associated onions and peppers and garlic) and got 21 pints or 10 qts.

Oh wow, that's almost half as much as we use in a year...(I wasn't sure if I should add the onions and peppers and garlic/spices to the sauce before canning it or not...) I hope we get at least that many out of ours. I don't know how I'm going to cook down all the tomatoes, maybe just add more as they cook down, as I don't really have a huge pot/roaster that could hold them all. I know you have a nice big stove and can fit two large pots on yours, but I think I can only fit one big and one medium sized pots on ours. I may have to wait and just do it on top of the wood stove this fall/winter as now the elements on my broken oven are misbehaving as well. I think soon we'll be down to the BBQ, wood stove and Vortex Plus for our cooking again. 😊

Today was brew bottling day and I'm pretty sore and tired now that its done and I've cleaned up that mess. So I'm going to go lay on my bed with a hot pad for a bit before supper has to be started. I'll chat with you again later. 😊

I was aiming for 52 pints of sauce for a year. I think I ended up pretty close. You can add seasonings and other vegs, but must follow an approved recipe, like from the Ball Blue book.

I was so delighted when I found those 2 roasters at the tag sale. I so rarely get to tag sales these days, so I was really lucky! Sounds like something you need... an 18 quart roaster...

I will do that for sure. I don't want to blow anything up or make us sick by trying to come up with my own, especially as this is the first year I've canned and still learning. I don't have the Ball Blue book, but I do have The Complete Guide to Pressure Canning by Diane Devereaux, that should have the same information, or pretty close, I'd think. 😊

Yes, I definitely need a nice big roaster, but I need a stove more, so it will probably not happen for another year or so. After we've replaced the stove, washer and dryer, fridge (on its way out), stand mixer (making awful noises and going to die soon), and gotten a new-to-us road-safe vehicle that have all died or are in the process of dying...then we can get some new things to make harvest processing a bit easier. Some day I dream of having a freeze dryer, too. I mean if I'm going to dream, I might as well dream big, right? LOL! 😊

Okay, well I have two more replies to look at and then I'm off to work on those peppers. Chat with you again later. 😊

God bless you and your wonderful family. Have an awesome day my fabulous friend! 😊

Does the book on pressure canning have a section on waterbath canning? I don’t know the book you have but have seen bad info in books not recognized as having safe proven recipes. Ball Blue Book is the standard.
