Oh wow, that's almost half as much as we use in a year...(I wasn't sure if I should add the onions and peppers and garlic/spices to the sauce before canning it or not...) I hope we get at least that many out of ours. I don't know how I'm going to cook down all the tomatoes, maybe just add more as they cook down, as I don't really have a huge pot/roaster that could hold them all. I know you have a nice big stove and can fit two large pots on yours, but I think I can only fit one big and one medium sized pots on ours. I may have to wait and just do it on top of the wood stove this fall/winter as now the elements on my broken oven are misbehaving as well. I think soon we'll be down to the BBQ, wood stove and Vortex Plus for our cooking again. 😊
Today was brew bottling day and I'm pretty sore and tired now that its done and I've cleaned up that mess. So I'm going to go lay on my bed with a hot pad for a bit before supper has to be started. I'll chat with you again later. 😊
I was aiming for 52 pints of sauce for a year. I think I ended up pretty close. You can add seasonings and other vegs, but must follow an approved recipe, like from the Ball Blue book.
I was so delighted when I found those 2 roasters at the tag sale. I so rarely get to tag sales these days, so I was really lucky! Sounds like something you need... an 18 quart roaster...
I will do that for sure. I don't want to blow anything up or make us sick by trying to come up with my own, especially as this is the first year I've canned and still learning. I don't have the Ball Blue book, but I do have The Complete Guide to Pressure Canning by Diane Devereaux, that should have the same information, or pretty close, I'd think. 😊
Yes, I definitely need a nice big roaster, but I need a stove more, so it will probably not happen for another year or so. After we've replaced the stove, washer and dryer, fridge (on its way out), stand mixer (making awful noises and going to die soon), and gotten a new-to-us road-safe vehicle that have all died or are in the process of dying...then we can get some new things to make harvest processing a bit easier. Some day I dream of having a freeze dryer, too. I mean if I'm going to dream, I might as well dream big, right? LOL! 😊

Does the book on pressure canning have a section on waterbath canning? I don’t know the book you have but have seen bad info in books not recognized as having safe proven recipes. Ball Blue Book is the standard.
It does have a section on water-bath canning and so does our canner itself. I'll be sure to use a recipe from there. Thanks for the heads up. 😊
