End of vegetable season, how to use up leftover vegetables

Hello everyone in the HiveGarden community. The vegetable and fruit season is coming to an end. Yesterday the first snow fell in my area. I picked the last of the vegetables so they wouldn't freeze. Today I will write to you about what I am doing with this last, tiny vegetable that can no longer ripen. In order not to list everything I use in the recipe, I will just tell you that you can put this thing I am preparing in glass jars, you can freeze it as cut into cubes, and you can also dry it. Then use it all as a spice in a dish

Here's what I put in my spice
1kg parsley root
1kg celery root
1kg parsnip root
5kg carrots
1kg celery leaves..parsley
500.g. red pepper
500.g. leek
1 kg salt
I mix everything and leave it for 24 hours... I fill it into jars, squeeze out the liquid, squeeze out as much as I can, press it into the bottles with my hands so there is no air, and close them with new lids. This time I pasteurized it because I only added 10 percent salt... but when you add 20 percent... it's not necessary.

All these vegetables are from my garden. Completely organic, I haven't treated them with anything. So I know what I'm using in my food. We buy spices prepared like this in supermarkets and they are extremely harmful. Read the packaging to see what it contains. So make your own.Personally, I prefer to dry everything and put it in a glass jar. In the dried vegetable version, I also add onion and garlic, and I also add chili peppers because I like hot, onion, and garlic.I have a lot of friends I hang out with, and when I go to visit, they get annoyed with me and tell me that if I buy them coffee or some cookies, I shouldn't do that, but should bring them a jar of my spice.
