My version of meat fajitas

Continuing with my tradition of sharing with you all my lunch of the day, here i bring you the meal i had yesterday, in which i tried to emulate a “mexican food” and i ended up doing minced meat with salted vegetables, and some more fresh vegetables.but giving it my personal twist like always because in this quarentina it is very tricky sometimes to get every ingredient you need to make a traditional recipe. It is a very easy to make fast meal to make, but it has something to it that is so delicious and nice to have it at lunch and also like a dinner.

For this particular meal i used:

250 g of minced meat, asked for some “roast beef” they called it in Argentina and it was minced then. I usually condiment my meat with some pepper, soy sauce, parsil, garlic and onion powder, and a little bit of salt. Then i Put a pot on the kitchen with a tablespoon of butter to melt and add the meat, mixing it regularly at moderate heat.

Put an eye on the meat always, you don't want it to be overcooked. It takes around 25-30 minutes to get it done really nicely, and then i added two whipped eggs, and some spring onion, and let me tell you what a touch this gives.

Leave it to cook for 10 minutes more or so, and then your meat is ready.

The vegetables need to be fresh as well, and like i always advice everybody, you really need to pay attention to the washing of all vegetables with a lot of water and i use vinegar as well.

For this recipe i chopped the paprika and the onion in strips, getting the onion like in Julienne.

I smashed and chopped a big garlic clove.

I salted on a pan and some drops of olive oil the garlic, onion and paprika adding them all at the same time and cooking in minimum amount of heat for around 30 minutes, parallel of the making of the meat. You want these vegetables to be done softly, so that they are well cooked, but without toasting them.

Once this is done, proceed to chop in pieces the tomato, in my case the tomato was so full of water that practically it broke everything and my cuts are not precise.

The same with the lettuce, i tried to get the whole leaves and separate.

Get some fresh Tortillas, in this occasion i bought these ones i show you, and overall they are really good and soft, good taste, right amount of salt. I warmed them up in the oven for 20-30 minutes, in very low heat, changing them from side to side in the trayi putted them.

I warmed up a white rice with corn that i already had cook yesterday, and it was still the same, very nice.

I strongly recommend that you put all the ingredients on the table with everything you need to serve it on the table, so that way everyone can build their own Fajita! for this everybody should get a tortilla, and filled it with the salted vegetables, with the fresh vegetables, the meat, rice, some corn beans, whatever you want in the particular order you want it.

On another occasion i would totally use avocado, which is very mexican, and some sauces like jalapeño or sriracha, or those obtained from chilis or vegetable origin, mustard maybe. I don't like to mention ketchup too much because we all know it, it is delicious but is not that good for our health.

The mixture between the textures and layers of soft, warm, added in the end with a cold and fresh feeling, is what gives this meal that awesome factor. I really hope you can try it and enjoy it some movie night with your friends or with your family, since is nice also to learn how to share and maybe talk?

I decided to drink these fabulous “organic and natural berry juice” from blueberries i found out in the market. I believe that in some extend it contain natural juice from berries and it doesn't have sugar so i think is the smartest choice because also, it takes incredible.
