Yesterday my cousins ​​visited me, to pamper them I prepared one of their favorite dishes, some delicious rancheros eggs with bacon, these consist of a rich fried egg, accompanied with a corn tortilla and some beans fried in vegetables and bacon ... really this dish is tasty and spectacular !!!

Ayer me visitaron mis primas, para consentirlas preparé uno de sus platillos favoritos, unos deliciosos huevos rancheros con tocineta, estos consisten en un rico huevo frito, acompañado con una tortilla de maíz y unos frijoles sofritos en vegetales y tocino … realmente este plato es sabroso y espectacular!!!

You will need the following ingredients (1 serving)

Necesitarás los siguientes ingredientes ( 1 porción)

• 1 egg.
• 100 grams of previously cooked white beans (you can buy a can in the supermarket)
• Chives and peppers, finely chopped.
• 1/3 cup of chopped bacon.
• Tomato paste.
• Salt, pepper, oregano and curry.
• Corn tortillas.
• Oil.

• 1 huevo.
• 100 gramos de frijoles blancos previamente cocidos ( puedes comprar una lata en el supermercado)
• Cebollino y ajíes picados finamente.
• 1/3 de taza de tocineta picada.
• Pasta de tomate.
• Sal, pimienta, orégano y curry.
• Tortillas de maíz.
• Aceite.

Initially, we fry the bacon, chives and peppers in a little oil.

Inicialmente, sofreímos en un poco de aceite, la tocineta, cebollino y ajíes.

Next, we add the tomato paste and the previously cooked beans, we proceed to season with salt, pepper, oregano and curry and incorporate all the ingredients.

Seguidamente, agregamos la pasta de tomate y los frijoles cocidos previamente, procedemos a condimentar con sal, pimienta, orégano y curry e incorporamos todos los ingredientes.

Then, we fry the egg in a pan with a little oil.

Luego, freímos el huevo en un sartén con un poco de aceite.

Finally, we proceed to assemble the dish, placing the tortilla on a plate, then we add the fried beans on top and finally we place the fried egg.

Finalmente, procedemos a armar el plato, colocando la tortilla en un plato, luego agregamos los frijoles fritos por encima y finalmente colocamos el huevo frito.

For a special touch adjust with pepper and add finely chopped basil

Para dar un toque especial ajuste con pimienta y agregue albahaca finamente picada
