This Pumpkin Chocolate Chip Loaf was the first–and by far the best–thing I prepared yesterday. When I first went gluten-free and vegan years ago, baking anything bread-like was the greatest challenge I faced in the kitchen.

Here's a delicious Pumpkin Chocolate Chip Loaf recipe that combines the warm, spiced flavors of pumpkin with the rich sweetness of chocolate chips. This moist and flavorful bread is perfect for fall, but great any time of the year.

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons pumpkin pie spice (or a mixture of cinnamon, nutmeg, ginger, and cloves)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 3/4 cup semi-sweet chocolate chips

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper.

  2. Dry Ingredients: In a large bowl, sift together the flour, baking soda, baking powder, salt, and pumpkin pie spice. Mix to combine.

  3. Wet Ingredients: In another bowl, whisk together the granulated sugar, brown sugar, melted butter, pumpkin puree, eggs, milk, and vanilla extract until smooth.

  4. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

  5. Add Chocolate Chips: Fold in the chocolate chips.

  6. Bake: Pour the batter into the prepared loaf pan. Tap it on the counter to remove any air bubbles. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs (but no wet batter).

  7. Cool: Allow the loaf to cool in the pan for about 10 minutes, then remove it from the pan and let it cool completely on a wire rack.

  8. Serve: Once cooled, slice and serve. This loaf is great on its own, but can also be enjoyed with a spread of butter or cream cheese.
