Hey guys welcome to today's episode of creative Sunday. Today I'll be making egusi soup, this is not the normal egusi that everyone eats. I got this method of cooking egusi soup when I based at Ondo state. The usual method people know of cooking egusi is frying of the egusi or boiling it, but in this method, I grinded the egusi using engine.
A friend of mine introduced this soup to me, she brought it to work with rice, I was surprised because I was wondering how someone will eat egusi soup and rice. Till I tasted it. This is not the usual egusi, we use the African nutmeg and selim pepper. It tastes just like peppersoup( in my mouth 😂). Oil is not used when preparing it.
Here's the ingredients I used:
Egusi
Pepper
Tomatoes
Onions
Oil
Maggi
Salt
Fish or meat(any protein of your choice)
Ehuru( this is optional but I love to use it). I tried getting it to use but I couldn't find it to buy around here, so I cooked without it. But when you add ehuru also known as posa in yoruba land and African nutmeg in English, the taste is superb.
You can add vegetable if you want
STEPS:
I started by preparing my egusi, pepper, tomato and onions and took it to grind
After grinding it, I put my pot in fire and dried it then added oil and allowed to heat for 3 minutes.
After heating my oil, I added my grinded egusi, Maggi, salt and fish. Then covered and allowed to cook.
I kept stirring occasionally and adjusted salt when needed. I allowed to cook for about 10 to 15minutes then the soup was ready.
I love this soup because it can be paired with either rice or swallow. Any swallow of your choice, be it semovita, eba, fufu, starch. Whatever goes with your tastebuds.
I was really hungry and forgot to snap my swallow with it, but I enjoyed it, I'll take it with rice tomorrow.
