Today I ran a couple of errands on the street, and they all went well, in a short time, and without complications. It's what we would call a good day. It wasn't entirely calm and relaxed, but it's very good that the activities I had to do were completed without failures or problems. I like things this way.

I left home and came back quickly, my brother caught up with me on the way, and we brought more food home, that increases the reserves and I love having the pantry well stocked. The budget for these days was a little unbalanced, and with today's payments and purchases, my account went down a little again, but it's at a level that is manageable, for the rest of the month.

By the way, I found out that today (October 9) we have a celebration of a National Day in Venezuela, on the subject of #food, and that is that today is the 'National Pasticho Day'.

#Pasticho is a dish that is very similar to Italian lasagna, although there is also a pasta dish in Greek cuisine that has practically the same name (Pastitsio). The Venezuelan dish was born as an evolution of Italian food, it has to be based on the fact that Venezuela was for a long time a host country for migrants from very different parts of the world. In the times after the Second World War, there was a migration of Europeans who were looking for an opportunity for a new beginning in this land.

The arrival of European survivors of the Second World War was not of a single nationality, but for now I am going to focus on the Italian community, because among their contributions to popular Venezuelan cuisine were very marked varieties of pasta and pizza. These elements also fit with the tastes that we were developing in this country at that time, due to the North American influence, so everything fell into place and became popular quite quickly.

And as it was integrated with the local cuisine, some recipes underwent some changes. In the case of Lasagna, which gave rise to Venezuelan Pasticho, it can be said that the most significant changes have to do with the type of cheese and sauce used. Although there are more radical and experimental variations of pasticho, which are even made without using pasta (plantain pasticho, zucchini pasticho, eggplant pasticho, etc.).

Something additional that changed is that, in lasagna (as I recall) bovine meat is used, but in the case of pasticho chicken, hen or even fish can be used too. Although that last may be another type of dish, one that here we call 'Pastel de Chucho'.

This dish is quite popular and relatively inexpensive, it could be prepared in individual portions or in cooking trays, and then separated into portions for each diner. I remember eating quite a few servings of pasticho when I was at university, and it is a pleasant memory.

Well, I liked the idea of ​​a national holiday for this dish, but I couldn't find out the history of the celebration, although I was able to find an interview on the subject with a university professor with whom I have memories. It is Professor Ocarina Castillo, when I was a student I worked for a while in the Department of Culture, and I was under her orders, after graduating, I was her neighbor in the Research Institute building. She is a professor dedicated to Sociology and Food Anthropology, quite interested in the history of food, and in the cultural meaning of food.

Seeing the name of an old professor again brought back memories of those past decades, and that made me a little nostalgic, but also put a smile on my face because of the good memories. Well, I think I've said what I wanted to say. Now I say goodbye, hoping that you are well and that we can meet again another time.

Hoy me dediqué a un par de diligencias en la calle, y todas salieron bien, en un tiempo breve, y sin complicaciones. Es lo que llamaríamos un buen día. No fue del todo calmado y relajado, pero es muy bueno que las actividades que tenía que hacer se cumplieron sin fallas ni problemas. Me gustan las cosas de esta manera.

Salí de casa y regresé rápido, mi hermano me alcanzó en el camino y trajimos más comida a casa, eso aumenta las reservas y me encanta tener la despensa bien surtida. El presupuesto de estos días estaba un poco desbalanceado, y con los pagos y compras de hoy, mi cuenta volvía a bajar un poco, pero está en un nivel que es manejable, por lo que resta de mes.

Por cierto, me enteré de que hoy (9 de octubre) tenemos en Venezuela una celebración de un Día Nacional, en el tema de #comida, y es que hoy es el ‘Día Nacional del Pasticho’.

El pasticho es un platillo que se asemeja mucho a la Lasaña italiana, aunque también hay un platillo de pasta en la gastronomía griega que tiene prácticamente el mismo nombre (Pastitsio). El plato venezolano nació como una evolución de la comida italiana, tiene que partirse de la circunstancia de que Venezuela fue durante mucho tiempo un país receptor de migrantes de muy distintas partes del mundo, y en los tiempos posteriores a la Segunda Guerra Mundial, hubo una migración de europeos que buscaban una oportunidad de un nuevo comienzo en esta tierra.

La llegada de europeos sobrevivientes de la Segunda Guerra Mundial no fue de una sola nacionalidad, pero por ahora me voy a centrar en la comunidad italiana, porque entre sus aportes a la cocina popular venezolana estuvo muy marcada las variedades de pasta y la pizza. Estos elementos encajaron también con los gustos que estábamos desarrollando en este país por ese entonces, por la influencia norteamericana, así que todo encajó en su sitio y se popularizó bastante rápido.

Y al integrarse con la cocina local, algunas recetas sufrieron algunos cambios. En el caso de la Lasaña, al dar origen al Pasticho venezolano, se puede decir que los cambios más significativos tienen que ver con el tipo de queso y la salsa que se usan. Aunque hay variaciones más radicales y experimentales de pasticho, que incluso se elaboran sin usar pasta (pasticho de plátanos, pasticho de calabacín, pasticho de berenjenas, etc.).

Algo adicional que cambie es que, en la lasaña (según recuerdo) se usa es carne, pero en el caso del pasticho se puede usar pollo, gallina o incluso pescado, aunque eso puede que ya sea otro tipo de platillo, uno que por acá llamamos ‘Pastel de Chucho’.

Este plato es bastante popular y relativamente económico, se podía preparara en porciones individuales o en bandejas de cocción, para luego separar en porciones para cada comensal. Yo recuerdo haber comido bastantes porciones de pasticho cuando estaba en la Universidad, y es un recuerdo grato.

Bien, me gustó la idea de un día nacional de fiesta para este platillo, pero no pude averiguar bien la historia de la celebración, a pesar de que si pude hallar una entrevista del tema que le hicieron a una profesora de la Universidad con la que tengo recuerdos. Se trata de la Profesora Ocarina Castillo, cuando yo era estudiante trabajé un tiempo en la Dirección de Cultura y estuve a sus órdenes, luego de graduado, fui su vecino en el edificio del Instituto de Investigación. Ella es una profesora dedicada a la Sociología y a la Antropología de la Alimentación, bastante interesada en la historia de los alimentos, y en el significado cultural de la comida.

Ver de nuevo el nombre de una antigua profesora me trajo recuerdo de aquellas décadas pasadas, y eso me puso un poco nostálgico, pero también me colocó una sonrisa por los buenos recuerdos. Bueno, creo que ya he dicho lo que quería. Ahora me despido, deseándote que tú estés bien y que nos podamos leer de nuevo en otra oportunidad.
