wheat flour + sugar + eggs = simple cake

I like simple cakes because that is the only type I can bake for now. But so far, I have not been very successful with cakes. In my mind, I imagine soft, fluffy, considerably tall cakes but in reality, I always end up with not-soft, not-fluffy and not-that-tall cakes.

Wheat flour, sugar and eggs are usually the basic ingredients for baking cakes, cookies, muffins, pancakes, crepes.

2 months ago, I did my first bake after a looong time which I wrote about it here. At that time, it was during the peak lockdown period and I suddenly felt like eating cake.

I pretty much searched online for a simple cake recipe and I found one with just 3 basic ingredients - guess what are those? :D


So, armed with just flour:

sugar and eggs:

I whipped first the sugar and egg together...

...and whipped them long and hard...

until the mix becomes quite fluffy...

And I tried as slowly as possible to fold in the flour so that mix do not lose its fluffiness...

Once the mix was in the cake mould...

...baking proceeded...

Until the cake was done...

A very simple recipe but as I wrote 2 months ago, the cake was quite eggy. I would add more vanilla essence in my next try :)

The cake was quite fluffy, quite soft though not-that-tall but I was pretty happy with it :D

I do a very similar cake :D But I usually pour it over sliced apples, a sort of apple pie ^-^ One of my favorites

My favorite cake recipe is a chocolate cake, and it has sour milk in it - which you can "make" if you don't have any turning milk around by adding a tiny amount of vinegar to not-sour milk. I think it is supposed to add to the "fluffiness." :) Nowadays I'm back on cow milk, but when I was vegan I would use soy milk and it turned out fine. I think you said you are trying oat milk if I remember? I never tried that, but it should work, I think!

Oh sour milk does that? That is another method to try :) I tried soy milk with scones, it works too. I have not tried oat milk but the tiny amount of vinegar to not-sour milk is one to try. Thank you @phoenixwren!

The ratio on my recipe is: 1 Tablespoon plus 1 teaspoon white vinegar plus milk to equal 1 1/3 cups. It also says you can use buttermilk with no vinegar in the recipe.

If you want a more fluffy cake you use 4 beaten eggs (separate yolk and white, beat the white) with sugar and a bit of flour. The flour makes it heavier. Keep in mind home made will always look different from what we buy from a fabric and bakery. A bakery/pastry uses all kinds of baking mixes too.

Ah I have seen that on Youtube videos where they beat the egg whites first until really fluffy. Thanks for the tip @wakeupkitty!
