My favorite cake recipe is a chocolate cake, and it has sour milk in it - which you can "make" if you don't have any turning milk around by adding a tiny amount of vinegar to not-sour milk. I think it is supposed to add to the "fluffiness." :) Nowadays I'm back on cow milk, but when I was vegan I would use soy milk and it turned out fine. I think you said you are trying oat milk if I remember? I never tried that, but it should work, I think!

Oh sour milk does that? That is another method to try :) I tried soy milk with scones, it works too. I have not tried oat milk but the tiny amount of vinegar to not-sour milk is one to try. Thank you @phoenixwren!

The ratio on my recipe is: 1 Tablespoon plus 1 teaspoon white vinegar plus milk to equal 1 1/3 cups. It also says you can use buttermilk with no vinegar in the recipe.
