Step 3: Add Vegetables and Tomato Paste

Next, incorporate the cut celery and sliced carrots into the pot. Stir to mix the vegetables well and cook them for a few more minutes. After this, add 2 tablespoons of tomato paste to the mix. Roast the tomato paste briefly until it slightly darkens; this can heighten its flavor before proceeding with the stew.

Step 4: Deglaze with Wine

If using red wine, pour in 250 ml (about 1 cup) now. This step, known as deglazing, helps lift the flavorful bits stuck to the pot from the meat and vegetables. If you choose to omit wine, you can substitute it with additional broth. Allow it to simmer for a bit to reduce the wine.

Step 5: Simmer with Broth and Herbs
