Perfect Pumpkin Pancakes Recipe

Ingredients (makes about 8 pancakes):

• 2 cups all-purpose flour
• 3 tsp baking powder
• 1 tsp salt
• 2 tsp cinnamon
• 1 tsp ginger
• 1/2 tsp nutmeg
• 1/4 cup brown sugar
• 1/4 cup white sugar
• 1 cup pumpkin puree
• 2 eggs
• 1 1/2 cups milk
• 4 tbsp melted butter
• 1 tsp vanilla extract

Instructions:

1. Preheat griddle or skillet to medium heat.
2. Whisk dry ingredients (flour through nutmeg) in a large bowl.
3. In another bowl, mix wet ingredients (sugars, pumpkin, eggs, milk, butter, vanilla).
4. Combine wet and dry just until blended—don't overmix.
5. Pour 1/3 cup batter per pancake onto griddle. Cook 3-4 minutes per side until golden.
6. Serve with syrup or toppings!
