Perfect Pumpkin Pancakes Recipe
Ingredients (makes about 8 pancakes):
- 2 cups all-purpose flour
- 3 tsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp nutmeg
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 1 cup pumpkin puree
- 2 eggs
- 1 1/2 cups milk
- 4 tbsp melted butter
- 1 tsp vanilla extract
Instructions:
- Preheat griddle or skillet to medium heat.
- Whisk dry ingredients (flour through nutmeg) in a large bowl.
- In another bowl, mix wet ingredients (sugars, pumpkin, eggs, milk, butter, vanilla).
- Combine wet and dry just until blended—don't overmix.
- Pour 1/3 cup batter per pancake onto griddle. Cook 3-4 minutes per side until golden.
- Serve with syrup or toppings!
