A lot of the "stablecoins" wont survive. So dont think your grandma will have that issue in the future. Its just now that every one wanna jump on the hype train
It will likely be a back end operation. Ultimately all stablecoins will be treated the same, as a US dollar. It wont matter what the "name" of the coin actually is.

sure this would be the case in a perfect world but... I don't see it happening any time soon or really ever since new ones just keep coming out

Chainlink like chains make sure you dont have to care for stablecoins and currency beneath. stablecoins exist because forex exist so cant run away.
dute there's some maybe-solutions but there's no one solution that solves this for everyone
