Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, diced

Instructions:

Prepare the Base:

  1. Sauté the Vegetables:
    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5-7 minutes. Add the minced garlic, red bell pepper, and sliced fennel, and continue to sauté for another 5 minutes, or until the vegetables are tender.

    Add the shrimp, mussels, and clams. Cover the pot and let it cook for another 5-10 minutes, or until the shellfish open and the shrimp turn pink. Discard any mussels or clams that do not open.

Finish and Serve:

  1. Add Capers, Olives, and Herbs:
    Stir in the capers, sliced olives, fresh basil, and fresh parsley. Taste and adjust seasoning with salt and black pepper as needed.
