JOLLOF SPHAGHETTI: MY GO-TO SPEEDY AND DELICIOUS MEAL 😋

Life is full of activities which we as humans engage with on a daily basis with some leaving us with short time to plan for a meal as we so desired except for few moments. In such times, the best thing to do is to go for a speedy and delicious meal with budget-friendly ingredients.

Jollof sphaghetti is one of such meals as it is easy to prepare in little or no time especially in situations of preventing starving after a day's work and no takeout is in view. This recipe I'm about to share with us is what i have prepared many times and is truly a life saver. The following are the easy-to-get and budget friendly ingredients needed for its preparation:

• Sphaghetti
• Tomato paste 🍅
• Grinded powder pepper
• Onion
• Vegetable oil
• Maggi/spices
• Egg 🥚

I limit it to this as i believe this is something affordable and easy to get, some other things may be added based on personal preference and affordability. Once the above has been gotten, then this simple recipe is followed:

• The sphaghetti is parboiled using a clean pot containing water until it boils on fire. The washed uncracked egg can also be added for it to be boiled alongside.
• Then the sphaghetti is collected in a sieve with the water removed.
• The tomato paste and the grounded pepper are mixed together with some spices added to it.
• This pepper mix is fried inside a hot vegetable oil with the onions fried aliitle first.
• The parboiled sphaggetti is then added to the fried pepper with some water added.
• Thereafter, salt and other spices as desired are added with some onions springs added to it.
• Once done, it is served hot or cold (as desired) with the boiled egg been unshelled.

This recipe as can be seen is a balanced diet with the sphagetti itself been a carbohydrate source while the egg been a protein source. The pepper, onions and spices added are rich in vitamins and minerals while the vegetable oil provides the fats needed. Kindly note that the egg can be replaced with fish or meat depending on personal choice, availability and affordability aswell.

This meal depending on choice can be served with chilled malt, yoghurt or fruit drink😀. However, it is good to note that the parboiling helps to reduce some of the starch (same as in rice cooking) and it's advisable to add small vegetable oil (low cholesterol vegetable oil preferably) to be added to it to prevent the sphaghetti from been sticky or glued to one another.
