Me encuentro rodeada con uno de los productos más exquisitos de la Amazonía "el Cacao". Este alimento es muy valioso desde tiempos ancestrales. Las culturas Pre hispánicas comían muy bien, tenía una dieta excelente en nutrientes para realizar sus labores diarias.
Recientes investigaciones nos dicen que la mayor diversidad genética de Cacao Theobroma cacao está entre Ecuador y Perú. ¡Vamos a ver, cómo está hoy en día este alimento ancestral!.
I find myself surrounded by one of the most exquisite products of the Amazon ‘Cacao’. This food has been valuable since antiquity. Pre-Hispanic cultures ate very well, they had an excellent diet in nutrients to carry out their daily work.
Recent research tells us that the greatest genetic diversity of Cacao (Theobroma cacao) is between Ecuador and Peru. Let's see, how this ancestral food is doing today!.
El Centro de Convenciones de Lima nuevamente estuvo de Gala, esta vez la estrella es: De la Selva su encanto "El Cacao". Desde el 18 al 21 de julio, este lugar reúne a productores de cacao de diversas partes del Perú y algunos países extranjeros como Suiza, Chile, entre otros. Por otro lado, si hablamos de Amazonía son infaltables sus enormes y coloridas flores exóticas.
The Lima Convention Center was again in Gala, this time the star is: De la Selva su encanto El Cacao. From the 18th to the 21st of July, this place gathers cocoa producers from different parts of Peru and some foreign countries like Switzerland, Chile, among others. Also, if we talk about the Amazon, its enormous and colourful exotic flowers are a must.
Entre los productos de la selva ví a la Pituca (Colocasia esculenta). Esta es una raíz tuberosa comestible y crece en esas zonas. Me alegró verla en su presentación de Chips (deshidratados). Este Stand tenía diversos productos (diversas marcas) promoviendo su consumo.
Among the forest products I saw Pituca (Colocasia esculenta). This is an edible tuberous root that grows in these areas. I was happy to see it in their presentation of Chips (dehydrated). This stand had several products (different brands) promoting its consumption.
Por lo general los chocolates con fruta tienen bajo porcentaje en pureza de cacao. Aunque Leoniza es la excepción. Ellos tienen chocolates con un 99% de cacao a excepción del Yacón (70% de cacao). El sabor del cacao es notorio y encantó a mi paladar.
Usually, fruit chocolates have a low percentage of cocoa purity. Leoniza is the exception. They have chocolates with 99% cocoa except for Yacon (70% cocoa). The cocoa flavour is noticeable and pleased my palate.
Desde Quillabamba (Cusco) vienen los chicos de Eros. Si pruebas chocolates con distintos porcentajes de cacao, notarás la diferencia en cuanto a pureza (fuerza y energía inmediata).
From Quillabamba (Cusco) come the guys from Eros. If you try chocolates with different percentages of cocoa, you will notice the difference in purity (immediate strength and energy).
En los próximos días habría un concurso de esculturas a base de Chocolate. Aquí tenemos al Inca con el cóndor, el felino y las banderas de Perú y Suiza (país invitado), y al Ave real. Diversidades de mazorcas de cacao y granos de cacao, llaveritos tallados en madera y el niño amazónico.

Desde hace unos años en casa tenemos la costumbre de consumir cacao en polvo en los desayunos. Y ahora nos alegró bastante asistir a esta Feria donde conectamos directo con los Productores. Además, les pregunté sobre su producción en campo. Normalmente, para encontrar Cacao de muy buena calidad se tiene que viajar hasta allá o ir a sus Fundos (campo), porque en Lima hay múltiples estafas si realmente buscas un producto de buena Calidad y precio justo.
At home we have been in the habit of eating cocoa powder for breakfast for a few years now. And now we were very happy to attend this fair where we could connect directly with the producers. In addition, I asked them about their production in the field. Usually, to find good quality Cacao you have to travel there or go to their ‘Fundos’ (fields), because in Lima there are many scams if you are really looking for a good quality product at a fair price.

- Tribar (Ucayali)
- Royal Raymi (Ayacucho)
- Korin (Morropón, Piura).
También conseguimos Cacao en polvo de:
- La Asociación Unión Shankirwato (VRAEM, Cusco)
- Div Chocolate (Tingo María).
Nuestra Amazonía es enorme, por eso en Perú decimos: De la Selva su encanto.
Finding Cocoa powder and chocolate (both 100%) was our mission in this Fair and we got it: Juan Laura (Pichari, Cusco), Tribar (Ucayali), Royal Raymi (Ayacucho), Korin (Morropón, Piura). We also got cocoa powder from: Unión Shankirwato (VRAEM, Cusco) and Div Chocolate (Tingo María). Our Amazonia is enormous, that is why in Peru we say: De la Selva su encanto.
Una de las presentaciones del chocolate común es en grageas (tipo pelets) y por lo general muy bajo porcentaje de cacao (desde 50%) y azúcares añadidos (fruta, miel, panela, etc). Por eso, no dudé en probar el chocolate con pecana y ahora probaré con Coco, quien es un alimento también muy saludable para nuestro organismo y lo mejor es que también viene de la Amazonía ¡Yehhh!.
Conventional chocolate comes in pellets and usually has a very low percentage of cocoa (from 50%) and added sugars (fruit, honey, panela, etc). That's why I didn't hesitate to try chocolate with pecan and now I will try it with coconut, which is also a very healthy food for our organism and the best thing is that it also comes from the Amazon!
Conocí parte de los productores de ambos chocolates California (Quillabamba, Cusco) y Pusharo (Manu, Madre de Dios). Además de hablarnos con su dejo característico de la selva, nos contaron más sobre el manejo en campo del Cacao. Las ganas con que ofrecían su producto de alta calidad era notoria.
Hubo varios productores que venían de zonas del VRAEM (Valle de intersección de los Ríos Apurímac, Ene y Mantaro), esa zona es movida (por el cultivo de Coca de forma informal e ilegal muy demandado en el extranjero) y me alegra un montón que se esté rescatando y promoviendo el cultivo de Cacao allí. Aprendí bastante en este Salón del Cacao y chocolate. Ahora toca probar sus productos y analizar las calidades entre los mejores Cacao del país.
I met some of the producers of both chocolates California (Quillabamba, Cusco) and Pusharo (Manu, Madre de Dios). I learned a lot at this Cocoa and chocolate fair. Now it is time to taste their products and analyse the qualities among the best Cacao in the country.
