Koro Bean Curry Rice
This special white rice dish was inspired by my local curry sauce. Curry is very popular in my regional area but the curry in my area is always a non-vegan sauce made from processed meats. Well, I always thought curry seasoning if cooked like fried rice would be perfect in a dish.
This idea seemed silly at first in my mind, but the selected aromas in the leaves and spices would be very good if processed into special curry rice. Moreover, here I added one of the ingredients that characterizes curry rice, namely koro beans. These beans are a complementary ingredient in this special rice, so believe me the savory and fat of the beans become a tantalizing combination. I got a lot of koro beans as souvenirs from my friend some time ago. And as a result, the idea of making curry rice with mung beans will be my first curry rice at the dinner table.

Ingredients Needed
1 curry leaf stem
100 grams of koro beans
1 bay leaf
1 spring onion
1 lemongrass stick
In addition to leafy spices, curry is incomplete without the subtle flavoring of selected spices. However, there are some curry spice ingredients that I don't add here like cloves and nutmeg for example. In my region's typical curry seasoning, we usually use these spices. But since I'm cooking curry rice, I'm afraid the flavor will be too strong. Well, if you want to add other spices besides the ones I mentioned I also recommend it. However, use the spices according to the portion you are cooking.
Ground Spices
1 clove of garlic
1 turmeric knuckle
10 peppercorns
1 teaspoon coriander
1 star anise flower segment
½ hazelnut knuckle
Cooking Procedure
Cut into small pieces all the spices you want to puree.
Then blend until smooth using a little water. If you have a choppers you can puree without water.
Heat 1 tablespoon of cooking oil, then stir-fry the pureed spices.
Saute until fragrant, then add bay leaves, curry leaves and also 1 lemongrass stem that has been cut into two parts.
Saute until the water is slightly reduced then add the koro beans, stir and cook until the koro beans are tender.
After the koro beans are tender, and the seasoning has begun to shrink, add one cup of white rice.
Then stir until evenly distributed and cook until the rice is stirred perfectly for about 10 minutes.
Finally season with salt, stir until evenly distributed, don't forget to correct the taste, and serve the curry rice on a serving plate.
