Vegetable Gambas Stuffed with Corn Dough

Today is inspired by a popular snack in Indonesia that is sold by many people out there. They call it bitter melon somai, this somai is stuffed in bitter melon vegetables but still they make it non vegan. Well the bitter melon has a bitter taste and that makes me dislike it. I tried it once and it did not suit my tongue at all. So to replace the vegetable I chose gambas (Luffa acuntagulla) which is almost the same shape and color. The taste is very different, and the filling from non-vegan I changed it by adding a delicious corn filling.

Gambas stuffed with corn is made from quite simple ingredients, made from gambas with corn filling that is made into batter and then steamed for a while until the vegetables and batter are cooked. I'm sure you'll love this dish, and I highly recommend making this simple and easy snack for family gatherings!




Ingredients Used

1 piece of gambas
100 grams of sweet corn
5 tablespoons tapioca flour
3 tablespoons of wheat flour
1 teaspoon ground pepper
1 teaspoon salt
½ teaspoon mushroom broth
½ teaspoon ground coriander




Preparation Steps


Step 1


Cut 3 to 5cm pieces of gambas or according to your taste. Then remove the hard skin on the surface of the gambas.

Step 2


After cutting it clean, wash and then discard some of the contents inside the gambas. Do not discard until the end, leave the edges so that when eaten it still feels.

Step 3


Then prepare the gambas filling dough, mix wheat flour and tapioca flour. Then add with the prepared sweet corn.

Step 4


Season with ground pepper and salt, then season with mushroom broth and ground coriander.

Step 5


Add hot water to the mixture little by little until the mixture is soft and easy to insert in the gambas pieces.

Step 6


Then take a spoonful of corn mixture and put it in the hollowed out gambas, fill it until all parts are full. Do it until finished

Step 7


If all finished, steam until cooked for about 15 to 20 minutes.

Serve the corn-filled gambas with the soy sauce onion sauce and feel the extraordinary sensation in this delicious snack. The taste of gambas that is really good in addition to the combination of the savory taste of corn dough and has a chewy and soft texture is enough to spoil the tongue. Moreover, the sensation of spicy onion flavor in the sauce is enough to add an extraordinary sensation to this one snack.
