A delicious vegan curry

Hello everyone, hope everyone is well. Today I am sharing a delicious curry with pumpkin and potato .I am going to tell you how to cook it easily in Bengali style.Let's see -

Ingredients :

Pumpkin - 200 grams
Potato - 3 pcs
Green chillies - 5 pcs
Cumin - As needed
Oil - As needed
Salt - 1 teaspoon
Tumeric - 1 teaspoon

First I took 200 grams of pumpkin. Then cut it into small pieces. Discard the thin covering while cutting.

Then I took 3 pieces of potato. I cut each potato into 8-10 pieces. The smaller the potatoes are, the better they will boil and fry.

Now add oil to the pan. Heat oil on medium heat.

Now fry the vegetables in hot oil for 3-5 minutes. Then they should be boiled. Add water as needed to boil. No need to add extra water.

Take 5 green chillies. Cut them in half. Be sure to wash with water after cutting.Add green chillies to the pan. But many may not like chillies. So add chilies as per your requirement.Then add salt and turmeric as needed. I used 1 teaspoon salt and 1 teaspoon tumeric.Tumeric will make the color of the curry attractive.

Cover the pan for another 5 minutes. Now everything will boil better. After 5 minutes remove the lid.

Wait until boil the water then keep the curry in another bowl.

Add cumin as required to hot oil. Fry cumin for 30 seconds.Then add curry again.

Keep the curry on medium heat for 4-5 minutes and keep stirring well.

Take 3-4 pcs pumpkin in a bowl and mash. Then add it to the curry. Keep the curry in the pan for another 2 minutes on medium heat. Then take it down.

Now it is ready to serve. This is how you can make this very easily.It is a healthy dish and also delicious to eat.
