A mixed vegetables curry

Hello everyone, hope everyone is well. Today I am sharing a delicious mixed vegetables curry recipe.I am going to tell you how to cook it easily in Bengali style.Let's see -

Ingredients :

Eggplant - 2 pcs
Potatoes - 2 pcs
Green chillies - 8-10 pcs
Salt - 1 teaspoon
Turmeric - 1 teaspoon
Oil - As needed
Cumin - As needed

Take 2 pieces of medium size eggplant and 2 pieces of potato. Cut the eggplant into small pieces. Cut each potato into 5-6 pieces. The smaller the vegetables are cut, the better they will boil and fry.

Discard the thin covering while cutting the potatoes.

After cutting the vegetables, wash them in water.

Add oil to the pan. Heat oil on medium heat.After the oil is hot, add cumin as required. Fry cumin for 30 seconds.

Then add the vegetables to the hot oil.Add salt and turmeric as needed. I used 1 teaspoon salt and 1 teaspoon tumeric.Tumeric will make the color of the curry attractive.

Now take 8-10 pcs green chillies. Chop each of the chillies. Then wash them in water and add them to the pan. Not everyone likes chillies. So add pepper as per your requirement.

Mix all the ingredients together well. The better the ingredients are mixed, the better the taste.

Add water as needed. No need to add extra water.

Cover the pan for 2-3 minutes. By this time the potatoes will be boiled well.

Keep the curry in the pan for another 2 minutes on medium heat.Then take it down.

Then take it down.Now it is ready to serve. This is how you can make this very easily.It is a healthy dish and also delicious to eat.
