A nutritious vegan curry recipe

Hello everyone, hope everyone is well. Today I am sharing a nutritious vegan curry recipe with pumpkin leaves.I am going to tell you how to cook it easily in Bengali style.Let's see -

Ingredients :

Pumpkin leaves - 250 grams
Potato - 1 pcs
Stone of jackfruit - 20-25 pcs
Green chillies - 10-12 pcs
Tumeric - 1 teaspoon
Salt - 1 teaspoon
Oil - As needed

First I took 250 grams of pumpkin leaves and then washed them well with water and then cut them into small pieces.

Cut the stems and leaves into small pieces like this.

Now it is ready for cooking, just wash it well before cooking.

Now take a potato and cut it into few pieces and soak it in water for a while.

Now add oil to the pan then heat it on medium and fry the potatoes.

While frying the potatoes I peeled the stone of jackfruit and cut them in half.

When the potato frying is done then add the pumpkin leaves and mix the necessary ingredients and fry for 5 minute.I added a teaspoon of salt and a teaspoon of turmeric here

Mix all the ingredients together well. The better the ingredients are mixed, the better the taste.

Now add water as required. It will help the vegetables to boil faster.

Now add 10 to 12 green chillies not everyone likes chillies so add chillies as per your requirement.

Now add the stone of jackfruit and cover the pan for 5 minutes.Keep the curry in the pan for another 2 minutes on medium heat.Then take it down.
