A vegan curry with pointed gourd and potato

Hello everyone, hope everyone is well. Today I am sharing a delicious vegan curry with pointed gourd and potato.I am going to tell you how to cook it easily in Bengali style.Let's see -

Ingredients :

Pointed gourd - 9 pcs
Potato - 2 pcs
Cumin - As needed
Green chillies - 6-8 pcs
Salt - 1 teaspoon
Tumeric - 1 teaspoon
Bay leaf - 2 pcs
Oil - As needed

First take 9 pieces of pointed gourd and 2 potatoes. Then wash them well.

Then cut each potato and pointed gourd into small pieces. Discard the thin coating while slicing.

After cutting the vegetables put them in a bowl and wash them well.

Now add oil as required in the pan and heat the oil on medium heat. Then add the vegetables to the hot oil.

Add salt and turmeric as needed. I used 1 teaspoon salt and 1 teaspoon tumeric.Tumeric will make the color of the curry attractive.

Now mix all ingredients well.

Take green chillies. Cut them in half. Be sure to wash with water after cutting.Add green chillies to the pan. But many may not like chillies. So add chilies as per your requirement.

Add water as needed. No need to add extra water.

Cover the pan for 2-3 minutes. By this time everything will be boiled. Then open the lid.

Now keep the curry in another bowl and fry cumin in hot oil. Then turn it into cumin paste in a bowl. After cooking the curry, put the curry in this bowl.

Take 2 bay leaves. Tear them in half. There will be 4 pieces after tearing. Then add it to Pan. Bay leaves will give extra flavor to the curry.

Then add curry to the pan.Keep the curry in the pan for another 2 minutes on medium heat.Then take it down.

Then take it down.Now it is ready to serve. This is how you can make this very easily.It is a healthy dish and also delicious to eat.
