Ingredients :
Eggplant - 3 pcs
Potatoes - 5 pcs
Onion - 2 pcs
Garlic - 1 pcs
Bay leaves - 2 pcs
Salt - 1 teaspoon
Turmeric - 1 teaspoon
Chilli paste - As needed
Oil - As needed
Methods of making :
Chop the vegetables evenly. I also chopped each vegetable evenly. Cut each eggplant and potato into 5-6 pieces.
Add oil as needed in the pan. Heat oil on normal heat. Then add potatoes and eggplant.
Now add chili paste to the pan. Not everyone likes chili. In that case chili paste should be given as required.
Now mix these ingredients together well. Because the better the ingredients are mixed, the more the taste will increase.
Add salt and turmeric as per instructions. No need to add more than 1 teaspoon of salt. Turmeric will make the color of the curry attractive.
Chop the onion and garlic then add to the pan.
Mix all the ingredients well. Now fry it for 5 minutes. Keep the pan on medium heat while frying.
Now water as needed. There is no need to add too much water as it can spoil the taste of the curry.
Cover the pan for 10 minutes. Now everything will boil better. After 10 minutes remove the lid.
After opening the lid, tear 2 bay leaves. Then add the bay leaves to the pan. Bay leaves will give extra flavor to the curry.
Keep the curry in the pan for another 5 minutes. Then take it down.
Now it is ready to serve. This is how you can make this very easily.It is a healthy dish and also delicious to eat.
