Recipe - Spicy Chicken from Indian Kitchen

Indian Kitchen is full of spices afterall Indian were born to eat some of the best spicy food. Either Veg Dish or any Non Dish. Go to any Indian kitchen and you get one of the spicy dish getting ready. My sister is one of the best cook I have ever came across, and her Chicken Dish is Always delicious. I remember her cooking Spicy Chicken at one occasion and I watched how a Purple looking chicken getting transformed into a thick Browny look.

All because of some of the best spices used in cooking. I have jotted down the entire step and ingredient to make the best Spicy Chicken.

Raw Chicken

We usually get fresh raw chicken from.market. they clean it with all feathers before handling to us. Still before cooking we wash them properly at home with Luke warm water to kill any germs.

Onion

Onion play a bigger role in cooking Chicken. The thick gravy that you have seen on the pic is all because of the water segregated by the Onion. The quantity of Chicken depends upon the quantity of chicken. Onion is half of Chicken quantity.
Also take a note how it was cut. These are not chopped but Cut into bigger pieces.

Garlic /Ginger /Chilli Paste

This is something on which the aroma of chicken depends. I can't have the quantity, but looking at this one can easily estimate the requirement for 2 KG of Chicken. All three must be properly grinded to make a paste of it.

Indian Spices.

After arranging for Chicken and other matterial require to roast, do prepare the other spices required for cooking. Looking atbthem, one can easily imagine the quantity of each of them. Garam Masala/Salt/Corriander/Black Pepper/Turmeric makes a very good combo and helps to get the best taste.

Cooking Method

Cooking spicy chicken, require little of Mustard Oil. Let the Oil to heat and put the Cut Onion and Garlic/Ginger paste. Keep frying it till they turn light golden in colour.

Once, the Onion start turning Golden, put the entire washed chicken into it. And mix them with the fried Onion. Add Salt as per taste, and keep stirring the chicken in Kadhai. Fry the chicken properly.

Cover the lid, of the Kadhai to get the chicken properly cooked and roasted. Covering the lid allow the Chicken to steam properly. Till that the Onion already started segregating the water and that allow Chicken to roast properly.

In between, do turn away the lid, keep an eye, if it was properly cooking or not. Also, add all the spices powder and keep stirring it till it start turning brown.

It took a good 20-25 minutes to get the chicken ready. After 25 min you can find chicken properly cooked and its colour turn brown. It is ready to give a spicy treat.

You can get the chicken into the bowl. Start savoring the taste with Indian Chapati or Boiled Rice. That is how we Indian like to eat. This is one of the finest chicken I had ever tasted. The look says it all.

That's true...quite basic, but the ratio of each and every item is what matters....that makes the food more delicious

Yes. Everything should be in its ratio or the item becomes worst. So we have to take care and have knowledge of it mainly.

This is where experience matters a lot...a novice may or may not cook that we'll....but ask an experience and they comes up with best all the time
