[Kekappa Special]- 🍽️ Juicy sweet balls ( রস মালাই) - Dessert 🍽️

There is a proverb in Bengali,

ভোজন রসিক বাঙ্গালী।।

To be honest more or less all Bengali become crazy hearing about any kind of meal. But when it comes to dessert then there is nothing more to say. I guess people who don’t like sweets can’t be found. It's kinda myth that must-have sweets after taking a meal. In Bengali It is called,

খাওয়ার পর মিষ্টি মুখ।।

Knowing about @bdcommunity weekly contest- "MAKING A DESERT", the first thing that comes to mind is ROSS-MALAI/JUICY SWEET BALL/রস মালাই.

It's a traditional dessert for Bengali, this is what we prepare on most of the occasions. Now I'll be sharing this super delicious dessert recipe. Hope you'll like it and don’t worry this is going to be very simple and easy to do.

Ingredients

• Milk powder
• Flour
• Egg
• Clarified butter / Ghee
• Liquid milk
• Sugar
• Baking powder

Process of cooking:

Take a bowl and pour 2 tablespoons of milk powder, 1 teaspoon of baking powder, 1 teaspoon of flour each with it.

Mix the dry ingredients well. Please don’t use baking soda or anything instead of baking powder. After that add 1 tablespoon of Ghee for fragrance. Don’t use butter or oil instead of Ghee.

Again mix all the dry ingredients well and crumble it. Try to doing crumble properly and have patience, don’t be hurry to make any kind of sweets. It takes ¾ minutes to crumble. We need a egg to make a smooth dough of sweet ball.

Take a small bowl and whisk an egg then add it here. After that mix all the ingredients properly and make a smooth paste. Please make sure that there is no lump on paste, it can ruin your sweet ball. No need to use any water. There is no fixed measurement of eggs, you have to understand the measurement while making the dough. If it doesn’t seem sticky then it's hard, pour a little bit more egg and mix it again. When the dough become sticky then it's perfect.

Now lid the bowl and leave it for 5 minutes in normal temperature. No need to keep it on refrigerator. After 5 minutes, apply a bit ghee on your hand and mix the dough. You may feel that your dough become super soft at this time. Now take a small portion of this dough and shape it like a small ball. Make all balls softly and be careful so that there are no scratches on ball. You can give any kind of shape according to your choice but make the ball small.

Now take a pan on stove and pour one litter milk on it. Add 2/3 cardamom in it. Add ½ cup of sugar in it.

Then add a bit saffron, it would add both color and taste. Wait till the sugar melt down. Keep your stove medium to low flame and heat the milk. Heat the milk but do not boil. Now add all the sweet balls one by one carefully and lid the pan, don’t open this.

Open the lid after 5 minutes. At this stage don’t stir by anything, you can shake the pan slowly. Again lid the pan and wait for another 5 minutes. Now open the lid and turn off the stove , lid the pan and wait till it comes into room temperature. Now take all balls in a bowl with some liquid milk. Now heat rest of the milk and dense it more. Heat the milk and make it just half. Add a little bit more milk powder at this stage stir it frequently. When it is dense enough, add the separated sweets then stir it softly. Turn off the stove and wait till it comes into room temperature. After that your dessert is fully ready to serve.

To make soft, spongy rossmalai follow exactly the process. Must try it at home. Trust me, nothing can take the place of this sweet.
