New Roads in Gordon - architecture and flowers plus Pad Thai : April 27 2024

Was another one of those days. Late night doing US markets stuff. Not the best sleep. My wife is churning a bit as she prepares for a first trip back to Netherlands in 5 years - not been on a plane in 4 and a half.

Do what I always do - make breakfast - write up the investing stuff. Plan a walk.

Today a long loop to the shops down some roads I have not walked testing fragments of bush. Great season for photos - camellias

Bee action got me looking at this flower - a little deeper in colour

Autumn colours are building up - great against the blue

Spied the pink crucifix orchid on the other side of the hedge. Rather than walk into the property - just leaned over and bent spike back. Hence finger in photo. No orchids were harmed

Lots of old houses here. Hard to get photos against the light - liked this one showing the double chimneys. Nowadays people knock the chimneys down

This road runs between Girdon and St Ives. The criss road is pretty much the border. Some history - Chris Minns is the current NSW Premier. He has just initiated a massive overhaul of the planning regulations to increase the density of housing and to remove the protection of the bush reserves - like the one on Minns Road.

Creek view - my first time down here

There are some grand old houses along the creek. Tough to photograph. This one just past the cross street going back into Gordon with a fab curved window shape

Azaleas in their garden. A lot of these houses are still occupied by the original owners - like 50 years long ago

Here is a gem - two storey building with storage underneath and a big hall above. It is the local girl guides hall - quiet spot in the bush but a little compromised by the railway behind. I would love to see if I could get a train room in there

Shopping mission was to get bean sprouts to add to Pad Thai dinner - a few prep photos

Decided not to use the pre-pack sauce - make it from scratch

Sauce is simple - tamarind puree, fish sauce, oyster sauce, squeeze of lime

The art is the rice noodles - drop in kettle boiled water for 10 minutes. Take out drain and cool down with cold water - set aside in the colander

Brown the prawns and chicken - for the cooked chicken I used it went in later

Stir fry onions and garlic for 30 seconds.

Add in pre-cooked chicken and prawns - tofu can go in now if you want.

Another 30 seconds and push aside and add in 2 eggs whisked. Scramble them and combine

Then toss in half the bean sprouts and combine

Then toss in the noodles, half the chopped peanuts and the sauce and combine until the sauce is mixed through

The photo shows what is wrong - not enough sauce for the amount of noodles. I did follow the recipe

Finishing touch is add the garlic chives chopped and the other half the peanuts. Serve with a squeeze of lime and fresh bean sprouts.

Next time - more sauce or less noodles and two eggs - not one.
