Lots of chopped up veggies being mixed up in a big pot, they will NOT be cooked, so can you guess what's gonna happen with them? Any Eastern European should easily recognize this concoction of veggies.

The veggies get salted and preserved to be used later in making Romanian sour soups mainly but they can be used in other dishes as well. In the past people didn't have access to fresh veggies all year round so they used this way to have veggies in the winter, if preserved correctly they don't need refrigeration.
Interesting.....I guess you would have no need to add salt to the dish they go in. 😁
