I record with guvcview on Linux, but the audio mixing is done with an analogue mixer plugged into my mixer, so I cannot fix the balance afterwards. For now it's a matter of trial and error :) I plan to get a better interface with more inputs, but will have to see how that helps.
I have Ardour for audio recordings. I'm only doing videos for fun and I'm not really interested in miming. I could do some editing of the audio for better results

Try Reaper. Its free 60 days and go in Linux.
Also you can record separetly guitar and voice under metronome, than record video and delete video sound and set record sound.

Fist we recorded, mixing and mastering melody and second we synchronize hand with music and add some videos) This I make on Reaper.
