Cachapas en el fuego / "Cachapas" Corn Cakes on the fire

In these photographs, we enjoy the nuances of fire and we also focus on a nutritious food, which takes as its raw material one of the most consumed fruits in South and Central America: corn.

En estas fotografías, disfrutamos de los matices del fuego y también enfocamos un alimento nutritivo, que toma como materia prima uno de los frutos más consumidos en América del Sur y América Central: el maíz.

"Cachapas", a kind of corn cake, are prepared simply and without many ingredients, although it takes work to bring them to the table.

The base product, corn, preferably tender, is stripped and then shelled with a knife, then all the grains are ground in a manual mill, in its absence, there are people who take it to the blender. To this, sugar is added and... voila!

Las cachapas, una especie de torta de maíz, se preparan de forma sencilla y sin muchos ingredientes, aunque requiere trabajo poder llevarlas a la mesa.

El producto base, el maíz, preferiblemente tierno, se deshoja para después desgranarlo con un cuchillo, luego, todos los granos se muelen en un molino manual, en su ausencia, existen personas que lo llevan a la licuadora. A este, se le agrega azúcar y… ¡listo!

The truth is that some people add liquid milk to it so that the cachapa dough is not so thick, it all depends on the consistency of the corn when it is ground. If the corn is tender enough, it may not be necessary to add more ingredients than sugar to taste.

La verdad es que algunas personas le agregan leche líquida para que la masa de la cachapa no quede tan espesa, todo depende de la consistencia del maíz al molerlo. Si el maíz está suficientemente tierno, es posible que no sea necesario agregar más ingredientes que el azúcar al gusto.

After mixing well, it is necessary to have a "budare" on the fire, a kind of metal plate, which many replace with a frying pan, this must be very hot, pass a small towel over it with a little oil, and spread the mixture on it.

Luego de mezclar bien, es necesario tener sobre el fuego un “budare”, una especie de plancha de metal, la cual muchos sustituyen por un sartén, este debe estar bien caliente, se pasa una pequeña toalla sobre él con un poco de aceite, y se extiende la mezcla sobre el mismo.

After turning it over and checking that they are cooked, they are spread with butter and accompanied with various contours, including cheese, fried pork, ham, among others.

Luego de voltearla y revisar que se cuezan, se les unta con mantequilla y se les acompaña con diversos contornos, entre ellos, queso, cochino frito, jamón, entre otros.
