Fall is upon us and I want to trap the essence of summer to take with us through the colder months and what better way than by making citrus mint tea!
My days have been spent tending my garden, chickens and family and it’s been good for my soul.
I received my apothecary glass bottles in the mail so after sterilizing them. I went ahead and bottled up the fire cider and cough tonic I had put together to infuse a couple of weeks ago.
I always make a big batch of these to share with my family. Cough and cold season is upon us and having these tinctures in your arsenal is always a good idea!
After having a bountiful citrus season and using citrus every day in my kitchen, I decided to make my citrus mint tea!
After juicing any citrus you have (I used oranges, limes, and lemons) cut your peels into small squares, flesh, skin and all! You can even save what citrus you use in the fridge until you’re ready to cut it up!
Dehydrate your citrus at 125 degrees until it’s throughly dry. Let cool and set aside.
Harvest your mint early in the morning for best flavor and rinse throughly. I used in my batch 2 parts chocolate peppermint and one part each lemon verbena and spearmint. Dry these at 95 degrees until throughly dry.
Once your mint is dry remove leaves from stems and stir into your dehydrated citrus mix. Keep in a glass jar and let steep in hot water (approximately 2 tbsp per cup) for 3 minutes. Use honey to sweeten and enjoy!
Not only does it smell heavenly it’s delicious and can be served iced!
