Ghee = Clarified Butter & its made from the milk of a buffalo or Cow, and its commonly use in asian cooking....

The oil which is eaten by burning of the milk of the cow, which burns it, is called ghee
That's kind of like caramel. It's made from boiling evaporated milk. However, if you don't stir it, the milk hardens ruining the pan.
