Cornell Note taking is great. The way I use Cornell Notes is to flip it, so that the second column is on the right: I can write in this and not cover the first notes. I got this idea from finding an article about medival manuscripts. Here's one from the British Library.

This is a page with only the first layer of annotation -- I downloaded one at the time with three or more different columns of beautifully written notes, but I can't just find the link right now ...
