One thing we don't make very often is Potatoe Pancakes. If you have enough time and know what you're doing these taste amazing. Also known as Draniki or Latkas they are primarily eaten for breakfast. Potatoe Pancakes are not the healthiest choice to start your day off with but they certainly are filling and definitely satisfying.
If you want to make them start peeling and grating some potatoes, about 2 lbs or a kilo should suffice. When I cook it's not a science, I usually prefer to eyeball things and wing it. You also chop up an onion and maybe a little garlic. Make sure to drain some of the potatoe water before combining the onions and potatoes. Add a little flour, some salt, pepper, and an egg in a mixing bowl; mix well.
You then fill a frying pan with oil and heat it up, I prefer to use Canola oil since it has no trans-saturated fat.
Once the oil is good and hot, spoon some potatoe mixture into the oil. Make sure you spread it out and that it's nice and flat so it cooks well.
2-3 minutes on each side should do the trick. Then let it dry on a plate with paper towels to soak up the excess oil.
I ate them with a mixture of ketchup and hot sauce, the classic way is with sour cream. The simplest foods are always the best, this is great with some fruit and other light choices.
