My meal today was fish cakes, cole-rabi and carrott salad, with baked potato and butter.
The fish cakes were made from carp caught by my husband, shredded zucchini from garden, onion from daughters garden, quail eggs from daughter @miniaturesmallholding garlic from local farmers market.
First cooked fish, deboned and removed skin, shredded zucchini, onion, finely chopped garlic.
Added the eggs to the shredded zucchini, shredded onion, chopped garlic and salt, pepper, one tablespoon of tapioca flour and one tablespoon sweet potato flour.
Mix well and seperate into 6 portions.
Fry in coconut oil (can use whatever oil you like).
Salad was made from cole rabi from daughter and the potatos were from our garden.
Shred cole rabi and carrot, add salt pepper cider vinegar and olive oil, or you favourite dressing and herbs.
Other additions were the salt, pepper, tapioca flour, sweet potato flour, coconut oil for frying, butter for the potato, and cider vinegar and olive oil for salad dressing! We use organic wherever possible and I am gluten and dairy free, so would use ghee instead of the butter.
