Analog:  Analog signal is a continuous signal which represents physical measurements. 

Digital:  Digital signals are discrete time signals generated by digital modulation. 

Considering the implications of the differences between digital and analog, technically digital is more accurate, and precise. This doesn't necessarily make it better. As a life time musician, I prefer the sound of analog, but I would never attempt recording in analog. It's oxymoronic to suggest such a thing, and probably doesn't make much sense, but good luck finding studios who specialize in analog, and if you do, good luck with the pricing.  It just doesn't make much sense to record in analog anymore, unless you are an enthusiast who likes to record your own music in your basement.
